How many pay stubs are required to transfer H1B. While transferring the H1B what's the minimum wage (within the paystub) required for a successful transfer?

minium of last 3 paystubs , minium pay should be more or equal to prevaling wages for the location

On H1, you need to get paid ALL THE TIME, and your salary has to be at least the prevailing wage.

If you didn't get paid, file a complaint with DOL on form WH4. The DOL will make the employer pay you.
