After GC - Work or not to work matter ?

I know question is kinda silly but here it goes for sake of understanding.

If you GC is approved based on Employment, do you have to be employed at any given time or you can be off the work ( take a break or something in between).

Also, in similar direction, what if someone gets laid off and can not find another job.

Sure you can take a break or be looking for a job after being laid off at the Employer.

All you need is proof that at the time of filing and while the petition was pending, you intended to work for the sponsor and the sponsor intended to employ you indefinitely. As we all know, intents don't always fullfill, and layoff is one of the cases when they don't. And it's ok.
