Questions about H1B stamping in Mexico with I140

I am going to Mexico City next week for my H1B stamping. This is my 3rd stamping, basically first stamping after my 6 year H1B period has expired, so I wanted to confirm a couple of things from folks who have gone through the experience:

1. MUST have documents

I have my tax returns, transcripts, degree certificate, paystubs, bank statements etc; but am I missing any MUST have document, and specifically originals and not photocopies in the below list:

  1. Passport (original and photocopy)
  2. Latest and past I797 (original and photocopy)
  3. I140 - form 9089 (I only have a photocopy of the signed form)
  4. I140 application receipt and approval notice (again, photocopies only, I did not get a physical copy for this)
  5. Latest and past I129 and LCA (again, photocopies only)
  6. Employment verification letter, original offer letter

2. Stamping in Mexico

I did my first stamping in India, second in Tijuana in Mexico, and this time again in Mexico - that seems fine, but would be great if someone can confirm or point out any issues. 

Feels like doesn't matter how many times I get the stamp, still don't feel confident without confirming, so thanks for the help!
