possibly unique situation on my EAD and work

I am currently employed full time (regular) with a big company and I am on my EAD. Have been on EAD since start here. 

My Priority date is oct 5 2005 but my former employer who filed my GC in 2004 -  05 filed it under EB3 

 

My situation:

 

I have a job offer from X - who is ready to help me upgrade my EB3 to EB2 which means a lot to me but the caveat is that the position is a contract to hire position. if I take this position it will mean 3 + months on contract and then a full time. IF I move from my current job there will be no company supporting me on my EAD or AP 

 

What do you guys advice? Can I move like this? will this affect my AOS and or filing for EB2 in future?

You can work on EAD for the three months and up until the time they file your Perm/I140 etc. You can always respond with an AC21 if USCIS comes back with a RFE. Just make sure your new employer is ready to give a EVL for invoking the AC21.
