H1B extention after 6th year

This is my first post.

 

My H1B has been approved for the next 3 years starting September 25th 2013. (That means I will complete 6 years on H1B on Sept 24th 2013). We are in August 2013 right now. 

 

Greencard details:

 EB3 - priority date Feb 2009. (I-140 approved)

 EB2 ported - audited - audit replied on June 2013

 

I wanted to know if I can start with a new employer on the new 3 year H1B even before September 25th? (I might have an offer in the next two weeks)

 

Ofcourse the new employer will have to start the GC process again in EB2. (Not relevant to this forum but will my priority date be retained? What kind of documents will I have to give the new employer to retain my priority date? How do I ask my current HR for these documents? Will they be reluctant to do so?)
