I understand that the best time to resign from current employer is after you have received the final approval notice from the USCIS. But what happens if you do not resign from the current employer and the H1B is rejected, can you continue to work from them or will they know that you tried to switch companies? Regards

Regards Your current employer won't know about the switch, so you don't need to worry about that. Since you didn't resign from the job, you can continue working with the same employer. Just assume that you didn't even filed H1 transfer.
