"I'm currently on H1 B with Company A and I have been on maternity leave unpaid from 3 months I have a new offer from Company B is it ok join Company B with out recent pay stubs?"

=> First of all you should be paid all the time on H1b. With valid reason you may be on long term leave (as you case), but you should have paystubs for every pay cycle. This paystubs may be 0 payments. Ask your employer to provide you paystubs even with 0 salary. If you don't have paystub, how will you prove you were related to your employer for last 3 months? USICS would also be interested to know this. No employer - employee relationship means no H1b status.

" I do not have any pay stubs but I have the email exchange between me and my company about me going on Maternity leave will that help?"

=> USCIS wants paystubs to show the relationship with employer. Even if you are on leave, employer should give you the paystub mentioning your PTO or leave or leave code and the amount may be $0.
