Keeping priority date years later

I have an I-140 approved from my current employer.

Due to uncertainty at work and long green card wait times, I am thinking of moving to Canada. Say if I get an opportunity to come back to the US after several years; say after my priority date is current will I be able to keep my current priority date, and get a GC in a relatively short time?

Ofcourse I will need to get a new labor, I-140 again then.
