Currently unemployed but looking for a new job, I am in status of employment based 485 pending (> 180 days). Before layoff, I used my AP to come back US, so that I am in AOS right now. Am I still safe now to use my valid AP to get back into US, under current unemployment status ?

It is important to understand in your situation that a pending I-485 does not provide an immigration status. It puts you in authorized presence while it is pending (which is not a status). The fact of your employment or unemployment does not change that. It can only be changed if the I-485 is denied. It should be safe to use AP, however, please do consult a lawyer on how to answer questions if any are asked when you cross the border.
