Need info regarding GC Process.

My employer (working directly for client) say 'Company A' applied for my GC in EB3 category and my Labor, 140 are approved now. Now I am planning to move to desi consulting say 'Company B' where they said they will initiate my GC in EB2 category.

1. Can I use the EB3 priority date.

2. Can Company B to initiate my GC process even before I joined there company. If yes, when is the best time to join company B.
