How to apply new Labor while holding apprived I-140?

Here's the situtation, My labor (PERM) was approved, I-140 approved (EB3) and subsequently was filed I-485 in 2007.

Earned MBA from University of Texas, found a job complementing my education & experience and qualifies under EB2 catergory. Please guide me how to make the switch? I meant what are the involved steps if I'd like to move from EB3 to EB2?

There is nothing "involved". You just file a new case. Make sure you use your A number during I-140 filing.

In that case how will I join the new company? Do I have to transfer my existing H1B or I can join with EAD (which I received part of EB3/ I-485)?

You are not required to join the new sponsor until your green card is approved. If you want to join earlier, your work authorization is your business.
