Visa Stamping appointment and change of job

Hi team, 

I am in the US now and I recently(last week) received my H1B approval(yes, I had RFE as well). I won't be continuing my job with my current employer from October 1st with whom I was working from the last 2 years although he applied for H1B assuming the company would be doing good. My manager has agreed to help with H1B transfer and whatever help that is needed. 

My question is; I am going to India in December but before that, I have to change my job and get H1B transferred. Can I take an appointment with US consulate in Chennai now for December time frame and when I change job say in Mid-October or November; update the details on the portal so that I have the same appointment? I get a feeling that by the time I change my job and transfer H1B(around November), all the appointments in Chennai would be gone and I wouldn't get any which means I cannot come back till I get the stamping done. 
Also, let me know what other options I have in this case.
