RFE for G-325 but I am out of job for over a year

My priority date is current and I received a RFE to submit G-325 form, in that I have to list the employers I have been working for in the past 5 years but I was not working for the past 1 year due to several issues in my personal life.  Though I was not earning I was working for my own LLC., on setting up business model , website and marketing plans, and I was also mentoring my friends company in India as a business consultant so can I show any of this as an employment proof? Will they require any kind of proof for that period of employment? Should I be currently employed ?  If not what type of issues I will face during the process.

 

Also there were few incidents where I have to file a police report on more than 1 person in more than 1 incident, will that be reflecting my in Background check? And my credit has been really bad due to issue that's related to the police complaints I have.  Will any of this affect my GC approval?
