Portability of H4 EAD

I am on H1-B with I-140 done and priority date of June 2012. My wife has valid H4 EAD till May 2019.  I plan to change my job. The new company is ready to file for my H1-b and 140. While my 140 is being processed with the new company will my wife be allowed to work on H4 EAD from old employer?

What are the current processing time to get to 140 if done regular processing and if done premium processing.

The current H4 EAD stays valid until it expires. To extend it, you of course need to have an approved I-140.
