Continuing H1 or use EAD. What to choose ??

Hello, I would be glad if you can throw some light on some of my concerns.

Current Working Status - H-1B

EAD Approved and completing 180 days in a week's time

I am working with Client A through my Company ABC.

Client A is offering full time but might not consider EAD.

Got a very good contract offer from Client B through a different company.

Don't wanna go with Company ABC. Wanna use EAD.

Is this a right Choice?

What happens if there's RFE on I-485?

Should I always have an employer? I know the EAD renewal process but are there any renewal issues?

or Should I File an AC21 Portability letter with USCIS?(I guess, I need to have a letter from new employer have consitent job responsibilities)
