Thank you for all the posts which are so helpful to people like me.

My husband is on H1 with extension. His I-485 is to be filed this year. I am currently on H4 and will be filing for J1.

1)What are the documents from his side that I need to take for my J1 stamping interview?

2)Do I mention if asked that he has applied for GC?

3)Do I need to take Marriage Certificate?

4)Also, do I need to take his pay stubs, tax returns , bank records etc. other than my hospital funding papers for financial resources proof?

Below are the response based on my experience. You will be asked mainly about the program and speciality related to your J1 visa application.

1)What are the documents from his side that I need to take for my J1 stamping interview?

Carry copies of all the documents that you have carried for H4 stamping such as Passport, H1 docs etc. You will not be asked for your husband's documents but be prepared

2)Do I mention if asked that he has applied for GC?

As long as your husband has not applied for I-485, the answer is No.

3)Do I need to take Marriage Certificate?

Carry the Marriage Certificate document just in case.

4)Also, do I need to take his pay stubs, tax returns , bank records etc. other than my hospital funding papers for financial resources proof?

Most likely you don't need them but better to carry incase they ask.
