Possible unemployment before receiving STEM extension approval

Hello, 

 

I am currently employed at a company which may have a funding cut in the very near future. My OPT EAD was valid till September 8 and I applied for OPT STEM extension on August 20 based on my current employment. I have received the I-797 stating that my application has been received (with the 180-day extension to my regular OPT pending approval). I am currently awaiting the approval and the EAD card. 

 

In the case if I am unemployed before receiving an approval for STEM extension, would I be using my unemployment days and still be able to receive the EAD card as I look for other opportunities? Or would my STEM extension not be approved.  I have used only 14 days of my unemployment on my regular OPT till date. What are the possible consequences in the scenario that I lose my job due to company funding issues?
