It makes no sense that that they did not or you suddenly had additional duties once you are proposed for EB-2. Things sound really suspicious. You need to speak with the attorney your employer has engaged to handle your case. Link to comment

Yes that's fine to show progressive experience as long as it was done. You can't make it up though. Experience letters are tricky things and attorneys want to show progressive work experience.
