Since you will need an I-20 with the travel signature from your College International Center, you will do well to interact with them about what they consider important documents to carry. Hopefully, they are aware of your job. You are allowed to travel and return. -

Your stay will be based on the pending AOS and not on the EAD. As long as you have a pending AOS, you can stay.

Any stay of more than 6 months and less than one year leads to a rebuttable presumption of loss of eligibility. The rebuttal may include proof of paying taxes here, a house here, and so on. The EAD you have permits unrestricted work. If you use the EAD, the H1 status is gone. Working for two companies at the same time is subject to Contractual limitations.

You may not be subject to the cap. You should be entitled to 6 years in H1 status. Many variables. Is the original sponsor company still existing? You should consult the Murthy firm or any of your choice before starting to look for H1 sponsors. -
